Chicken & Dumplings in the slow-cooker

Ground Turkey patties (make like meatballs but squish into patties and coat in breadcrumbs - bake @ 350 for half hour, flip halfway between) with cranberry sauce & mashed potatoes.

Ravioli with Sweet Italian Sausage

Trader Joe's Mandarin Chicken w/ brown rice

A few I make often:

*marinated salmon
*southwest eggrolls
*veggie/beef soup
*lemon pasta w/ chicken

* BBQ Seitan, coleslaw, corn, beet and orange salad
*Green Lightning- brown rice noodles,kale, tofu, avocado with tamari sauce
*Roasted eggplant with tomatoes, peppers, onion, garlic and olives
*Sifnos pizza- whole wheat pita bread base, cucumbers, onion, peppers,
tomatos, capers, olives, tzaziki

We try to eat Whole Food Plant based- no meat, no dairy, no oil, no sugar, limited salt. Not always perfect, but we try.

I do most of the food prep for the week on the weekend. Chop all the vegetables and package them appropriately for each night. Casserole type things are made in advance. Beans are cooked. Salad dressings made. It makes the weekend not so much fun (athough I can catch up on Netflix shows), but the week days are MUCH easier).

How about salsa chicken or even salsa pork loin? Salad side, or black beans and rice?

I like to put a roast in the crockpot and use it a couple of days. Roast pork with garlic on it can be eaten with just about anything. Then I take it, dice some up and toss it with taco or fajita seasoning, put it in a tortilla with some beans, and cover it with green chili enchilada sauce and bake until bubbly. Then with the rest make taco soup or enchilada soup. Or even add some BBQ, shred it and have shredded pork sandwiches. I do fairly similar things if I do a beef roast (or buy a whole chicken).

I also make a pizza thing - I make my crust, but I have used a store-bought uncooked crust - bag that you add water to, or in the refrigerator rolls.. Add about half a jar of sundried tomatoe Alfredo sauce, then sliced tomatoes and a bit of feta cheese. Cook until crust is done and drizzle balsamic vinegar glaze over top. Gosh, I love this one! Don't forget the glaze, though.

Slow cooked whole chicken
Thick pork chops fried briefly on the stove and then put in the oven
Baked Chicken breasts with sherry,chicken broth and parmesan cheese

Roasted broccoli and cauliflower with pan cooked chicken tenders

For the veggies:

  1. Preheat over to 425
  2. Mix together 2 Tbl olive oil, 1 tsp lemon juice, 1/2 tsp salt, 3 minced garlic cloves, and black pepper
  3. Chop 12 oz bag of broccoli and 12 oz bag of cauliflower into small (and similarly sized) florets
  4. Toss broccoli and cauliflower in oil mixture
  5. Lay veggies on a roasting pan in a single layer. I place them on top of parchment paper
  6. Sprinkle veggies with Italian seasoning to taste
  7. Roast in over for 20-25 minutes. Store every 7-10 minutes to get them all equally crispy.
  8. Right before they are finished, drizzle with a little balsamic vinegar (about five minutes from the end of cook time)

Because it’s summer my meals depend on whatever is available at the farmstand.
-BLTs and corn on the cob.
-I love all colors of tomatoes and will put them on pasta, in salads, and in omelets.
-Cucumber, pepper, and tomato with quinoa
-Chopped veggies on the grill with smoked sausage and pineapple

What are those meals that are constantly in your rotation? I figure if we all share them, we can add some new ones to each of our rotation.

Stuffed Peppers
Sheet Pan Italian Chicken and Veggies
Crustless Quiche
Chicken Tacos
Taco Salad
Taco Soup
Parmesean Chicken and Potatoes

I am in desperate need of some new staples. Especially healthy and fast ones!
