Mardi Gras colors are green, purple, and gold. Maybe do a veggie tray with various green veggies (easy!), purple carrot slices (or some purple fruits) and yellow pepper?

Dollar Tree or other types of dollar stores will probably have the Mardi Gras beaded necklaces that are popular. Get a couple of those to toss around your table for decor. They probably have the masks too.

What about these Jambalaya Sausage kebabs? You could do some just with veggies on them and some with sausage and veggies.

Some sort of grilled shrimp would work too, especially if you do a cajun type seasoning

Saw a recipe at EatingWell for Jambalaya Sausage Kebabs with onions, bell peppers and smoked sausage that sounded good and easy.

Gumbo is usually soup with tons of veggies.
Any kind of fish or shellfish
Dirty rice
Rice and beans

We are hosting a healthy eating / nutrition meeting on Fat Tuesday. We typically have several healthy finger foods or low carb, gluten and dairy free items to nibble. My lovely DH (read the sarcasm) told the group that I would do a Mardi Gras theme. Fat Tuesday and healthy donít play well together.

I was thinking a variation on Jambalaya and thatís all I have. Any suggestions? Recipes? Typical foods that I could play off of? I donít believe I have ever been to anything related to Mardi Gras.
