I want my students to pick a few poems that really speak to them and put them in a poetry anthology. They will also write during writer's workshop and those poems will go in the anthology as well. My question is this, since students will copy a few poems they have read during reading time, should I include some sort of bibliography since they will be using poems from various poets? I've never thought about it until now.

It is never too soon to teach the importance of citation and the danger of plagiarism...I would have a bibliography, even if it is an easy modified one. Start good habits, and let them see that whenever you use someone else's ideas you need to give that person/source credit.
