Greek and Latin Roots
I would trash the idea of spelling lists and do a more focused study of vocaulary using Greek and Latin Roots. There are several resources out there for the middle level.

Letter of apology
I have my students write a letter of apology to the sub. signed by the student and their parents. I then leave it with the sub. the next time he or she is in the building.

Our overall curriculum is the same, our scope and sequence is modified by course level, but how we teach the lesson and what we record in the grade book is completely up to us.
