I have summer access, but

I find myself going in less and less each year. When there is no pay-off, or even appreciation, it lessens my motivation to give more for free.

Software is by subscription.
Educational practice sites are by subscription. (I was really bummed when Whooo's Reading went to a prohibitive $150 a year.)

Our district has gone on-to-one iPads. They are now set so that students cannot erase history. It's good for situations like you described. I hope you screen-shotted and saved the proof.

I'd use regular paper, but then put them in sheet protectors.

If you have a laminator available, that would be another way to increase longevity. I've even done that with cheap two-pocket folders...

Haven't used Grammarly-

I do have my students use the free version of Paper Rater (paperrater.com).

It gives basic editing, spelling, and vocabulary use ratings.

Simulation- pricey, but...

I've used simulations from Interact for years. The one on Ancient Greece includes many of the things you mentioned. My students were always highly engaged when learning this way.
