I didn't know what a 4:3 diet was

so I looked it up. This article explains it, though the conclusion is that it isn't a healthy choice. Since you are doing this with a doctor's knowledge I assume your health will be monitored.

I'm a little foggy on your background,

but, if you have any degree at all, you should be able to apply for alternate certification. You might still have to take a few classes, but could do that while teaching. At least that could happen...

I wouldn't throw them away

They were paid for with school funds, and likely are inventoried in some way. I would ask for direction from the principal about where/how they wish them to be stored.
