I think I would just set up the recorder and film every day. Eventually you'll be used to it and not even notice it. Then you can pick a couple of good ones to turn in.

Data Notebook

I think a data notebook would be a good way. You can use GR level, numbers of sight words known, math facts, etc, and have them color in boxes when they pass things off or improve.
