Of course she doesn't WANT to give a refund, but if I was you I would politely demand it. You placed your reservation for that cabin and she can't follow through.
I would try to get the money back and take a different type of vacation, maybe closer to home and a different type of holiday style (city and go to nice restaurants/show or something). Maybe it would have to be shorter but I think if you went for her alternate cabin you would resent it while you were on your holiday.
(Of course if you can find a nice cabin in the woods from someone else, that would be great!)
