I have many EAL students in my class. I am doing my best to avoid cultural bias in informal assessments. Please give me some advice on how to do this!

no one has answered your question. Testing fairly is very difficult. You will probably have to do some heavy duty research to get your answers. Good luck!

One thing is to think about what experiences do all the kids have. Kids who come from different backgrounds or cultures or climates may not have all the same experiences. For example, it might be hard to predict what happens to a snowman in the sun if you've never seen snow or been somewhere colder than 60 degrees.

Building experiences in the classroom that are common to everyone can help you have a base to draw on.

You can also make sure things are openended. Instead say of creating an assignment of "write about your favorite Thanksgiving meal" (which could exclude kids new to the country) you could say "write about your favorite meal" and brainstorm what all that could include.
