Iím normally a decent cook, I can follow a recipe and rarely have fails. In the last week Iíve ruined 2 dinners. I burned meatballs a few nights ago and tonight I made coconut chicken. I canít even tell you what happened but it was horrible.

Iím really trying to get back on the wagon, eat better, count calories, blah, blah, blah and these ruined meals arenít helping.

Iím so tired of ruining meals.

Just venting.

Sorry it's not been working out.

Have you ever tried baked sweet potatoes? They are yummy and quick.

I always admire your adventurous cooking and willingness to try new recipes. Of course you’ll have failures.

The alternative is to be boring like me: same stuff over and over.

I think we all go through that occasionally. For me it has been due to carelessness when I was over confident, multi tasking or just plain not following directions. Ruined foods help me to remember to focus next time.

I hate when that happens. All that time, $ on food, dirty dishes....an no yummy meal! That is frustrating.

Are you still trying to do paleo? Could it be something related to that? Using different ingredients that you normally don't use?

Give yourself a day off from cooking a big meal. Sounds like you need it!

I am doing paleo. The meatballs were a combination of that and my oven. The recipes are written horribly and Iím used to Skinnytaste, her recipes are incredibly well written.

I have no idea what happened tonight. I live on chicken. Iíve ever ruined it before.

The problem is since Iím new to paleo I donít have any quick and easy go to recipes yet so Iím stuck. Thatís why Iím struggling so much.

Yes, that would be very hard. I've looked at paleo, but there was a lot that just didn't look very easy in terms of recipes. I admire your perseverance! Lots of people talk about how great they feel on it, so it is worth a shot!

My beloved mother was an amazing cook but even great chefs blow it occasionally. Mom had an awesome saying, ďGive them enough to drink and theyíll never know the difference.Ē Miss you Mom!

How did you make the coconut chicken? I use Skinnytaste recipe and it is a family Favorite. However, I learned to cute the chicken in pieces FIRST and then bread them otherwise when I go to cut them after they have cooked, they just crumble into pieces.
