I use Chris Van Allsburg's The Stranger. As we read the book we discuss why we think the stranger does not talk. As we get to the end of the book I ask them what they think the Stranger is....fall. They then write in their journals about their thoughts and illustrate. We then share the ideas together.

Any wordless books are great for inferring. You could start with just pictures and make inferences.
Also Tanny MacGregor had the idea in her book Comprehension Connections to bring in an old slipper and have kids make inferences about the person who wore them.
