What are some good quick and easy snacks for diabetics? A friend keeps getting cookbooks with several ingredients and commented today, "I wish I just had a list of quick and easy one ingredient no work snacks!" Anybody got some good ideas for this list?

My husband's favorite snacks right now are green apples and sugar-free pudding cups. They are both quick and simple and fit nicely in his lunch box. He also likes Wheat Thins.
