I want to try quinoa. What is an easy, foolproof way to make quinoa that will blow me away to want to make me keep wanting to cook it for future meals?

The best quinoa I have had is actually a packet by Seeds of Change that has quinoa and brown rice together (I can get it at Target). I usually saute some celery and pepper in a frying pan and add it to the packet after I have heated it up in the microwave. The added vegetables really give it a nice flavor and it is super easy.

I like this recipe as a side dish. You can change the ingredients pretty easily depending on what you have.

I like this recipe as a main dish.

If you google it or look on Pinterest, there are all kinds of ways to make them. I like them with carrot and zucchini, tomato and mozzarella, etc. Some of them, to me, taste almost like a salmon patty if you put a little Tamari (gf soy sauce) on them and serve with rice.

ONE PAN MEXICAN QUINOA
YIELD: 4 SERVINGS PREP TIME: 10 MINUTES COOK TIME: 25 MINUTES TOTAL TIME: 35 MINUTES
Wonderfully light, healthy and nutritious. And its so easy to make even the quinoa is cooked right in the pan!

PRINT RECIPE
INGREDIENTS:

1 tablespoon olive oil
2 cloves garlic, minced
1 jalapeno, minced
1 cup quinoa
1 cup vegetable broth
1 (15-ounce) can black beans, drained and rinsed
1 (14.5 oz) can fire-roasted diced tomatoes
1 cup corn kernels, frozen, canned or roasted
1 teaspoon chili powder
1/2 teaspoon cumin
Kosher salt and freshly ground black pepper, to taste
1 avocado, halved, seeded, peeled and diced
Juice of 1 lime
2 tablespoons chopped fresh cilantro leaves
DIRECTIONS:

Heat olive oil in a large skillet over medium high heat. Add garlic and jalapeno, and cook, stirring frequently, until fragrant, about 1 minute.
Stir in quinoa, vegetable broth, beans, tomatoes, corn, chili powder and cumin; season with salt and pepper, to taste. Bring to a boil; cover, reduce heat and simmer until quinoa is cooked through, about 20 minutes. Stir in avocado, lime juice and cilantro.
Serve immediately.

I use half brown rice and half quinoa and cook with chicken broth or water with bouillon added and mrs dash seasoning. In the end add feta cheese and chopped spinach.

I have sometimes eaten it with a little butter and sugar. When I am craving something sweet! My great-grandma used to make me white rice with butter and sugar as a treat. I feel like the quinoa is better than butter!

But usually I just make it to eat in a healthy way. Last week I made it with some fresh basil, peas, and tomatoes, and cucumbers.

I have also used in place of bread crumbs when making turkey meatballs. (I found the turkey-quinoa meatball recipe online and it was so good!)

I will start with the Mexican route since I love those flavors. I will bookmark this to have for later.

Rinsing before cooking

Re: Crazy eights:

I have added this brand to my grocery list. Do you rinse the quinoa/rice mixture before you cook it. I ask because on one of the other recipe's reviews it said to rinse the quinoa before cooking.

That's why it's so easy and quick--and you could really saute anything and add it. I like quinoa but it is sometimes too much--that's why I like it mixed with the brown rice--I have even added to salads to make them more substantial.
