Lunch

Itís only the end of September and Iím already pretty much as bored with my lunches as I would be in January.

What are your easy, go-to lunches?

Done I usually rely on areÖ
1. Leftovers from the night before. However, I havenít been cooking as much since the school year started out of basic exhaustion.
2. Grown-Up Lunchable - little naan dippers, cucumbers, & cheese cubes.
AndÖthatís it.

I could also use snack recommendations. My prep is at 9:30, my lunch is at 1:30. My classes are during everyone elseís lunch hours, because I have both grade levels. If I donít eat a snack during prep, I feel sick by my lunch time.

Thank you for the recommendations!

For lunch I eat those frozen grilled chicken strips & half of a prepared salad (bag from Aldi- Sweet Kale Chopped Salad Kit is my favorite), sometimes fruit too.

I prep the chicken the night before or that morning and just add half the salad to it.

I dont really liked lunch so I eat for fuel only. I would buy a variety of frozen Lean Cuisines to keep on hand. In the morning I would throw one in my insulated lunch bag and then pop it in the microwave for lunch. Doesn't get much easier than that!

I'm very simple with my lunches.....I usually take a yogurt and a banana. For snack I have a granola bar, cheese stick, pretzels and hummus, or whatever we have in the cabinet.

Stead the inside of a pita pocket with hummus or guacamole, and stuff it with my favorite vegetables and cheese. Your can also throw in fajita chicken strips or Turkey. Dressing if you want.

I struggle with eating at school as well. My sister bought me Sargentoís Balanced Breaks to take to school. The one I had today was small cubes of cheese and a mixture of dried cranberries and salted walnuts. For me, itís just enough. I havenít looked, but she said they had different combinations. Itís on my grocery list for this week to grab a couple more.

When I was subbing, I sometimes took a peanut butter sandwich and a banana. Sometimes a turkey and cheese sandwich. And maybe a sweet of some kind - this time of year I love those Little Debbie pumpkin flips. I enjoyed Greek yogurt and Belvita for a snack.

These are great ideas, thank you!
I also love the cheese breaks, but they are haaarrrrd to find around here! I bought string cheese bites from Hy-Vee that are a decent replacement!
