I know we will go over & practice each center before just throwing it out there but how do you show who's going to which center to the younger grades who are not reading yet? Is it simple enough to have an illustration on the chart for them to follow?

You could divide your students into groups and that group goes to the center together everyday. Each group could be a color and each center have a picture that goes with the center For example the Green Group is going to the writing center. (you could have a picture of a peice of paper and pencil with the word WRITING under it.) You can change the groups up every other month or so. One month they can be colors, animals, planets, vehicals, jobs. etc that way when you change groups you dont have them being confused about being a Yellow last time and now they are a Blue.
