Iím new to Zoom. Iíve been invited to a 10am meeting. The people attending and the host are all in the eastern time zone. The host accidentally set it for 10am pacific time. Does that really impact the meeting at all?

I have done that. (only when some of my attendees are in different time zones) No, it shouldn't impact the ability to meet at the time you want to meet. But the host will want to reset the time zone

Nope, as long as the host is there at the correct time to start the meeting for everyone. The meeting starts when the host starts it from their end, regardless of what time it was originally set for.

I've kept the same Zoom code for all my socializing meetings, and I just activate it at whatever time we're getting together. It bears no relation to the time on the invitation whatsoever.
