What would you serve at a baptism luncheon with catered sandwiches? I'm looking for something more fall-like rather than the typical potato salad and cole slaw, especially if it's a chilly day. Thanks!
How about a warm german potato salad , kind of an Octoberfest dish. Chunky homemade applesauce is a favorite Fall dish of mine too. Baked beans, as well.
1 lb. coleslaw (purchased in produce dept.)
1/4 to 1/2 cup chopped green onions
Place coleslaw and green onion in a large salad bowl. Refrigerate until ready to serve.
Other vegetables such as green pepper, radishes, red cabbage, water chestnuts, and carrots can be added to the coleslaw/onion mixture.
1 cup sunflower nuts/seeds
1 cup toasted sliced almonds
2 pkgs. beef Raman noodle soup noodles (crush noodles while still in the package - save soup base for dressing)
Place seeds, almonds, and crushed noodles in a quart jar and mix. Cover. Pour into salad just before serving to keep mixture crunchy.
Dressing:
2 pkgs. Raman noodle soup base
1/2 c. sugar
1/3 c. white vinegar
1 c. oil
Mix and refrigerate. Pour over salad just before serving. You can make this for an individual or a crowd. Combine only the ingredients for a single salad or a larger one. Once all ingredients are combined for a larger salad, it does not store well in the refrigerator. It gets soggy.
How about a creamy soup that can be served in mugs or disposable coffee cups such as butternut squash bisque or tomato soup? Broccoli cheddar soup is yummy but needs a spoon.
I love these ideas. I can be kinda picky about food but I'd love to see the following at any fall event; soup/chili; roasted vegetables; stuffing or dressing. or macaroni and cheese.
Butternut squash or pumpkin soup. Or maybe mashed root veggies. This is a favorite in my family: potatoes, sweet potatoes, rutabaga, parsnips (carrots and turnips, too, if you want) all mashed up with milk and butter and a little nutmeg.
