I have ground turkey so I would like to make a soup with it. I plan on chicken broth, carrots, onions, and seasoning. Do you think barley will be good with it. I figured it would be a little more healthy than pasta or rice. What are your thoughts?

Yes, I love barley in soup..... but I would cook the barley separately and then add it to the soup already cooked. Barley absorbs a lot of liquid and if you put it into the soup, it might end up more like a stew.

Sounds good? Sausage and greens make a nice addition to turkey soup. So does cream but then it isnít as healthy.

I just made barley soup today using ground turkey. I added carrots, celery, potatoes, barley, a red pepper,a can of tomato sauce, some chicken broth, paprika, thyme, and the barley. We made it to have for lunch for several days.
