One of our second grade teachers did it as a read aloud last year during her moving West unit. Her mother made all the girls bonnets and dolls with dresses that matched their bonnets. She made the boys fishing poles.
She made her tables into covered wagons with flexible poles and white bulletin board paper. They wrote with quills and the had a "one room school house" day where they wrote on slates and they learned how school used to be. The parents and kids loved it!
They also made butter in a jar and cornbread.
