Waitress's job. It's always correct to add 's to any singular noun to make it possessive, even if it ends in s. The King James version of the Bible often does it in an archaic style-like Moses' tablets-but that's not common, modern usage.
*You would actually pronounce the 's in this word making it three syllables. You wouldn't pronounce it "waitress job" which waitress' would suggest.
It is the waitress's job to take the orders.
