The faculty is having a light luncheon on Friday and I signed up to bring an appetizer. I am looking for one that is easy and requires no heating. (We don't have any ovens in our school. We do have 2 refrigerators!) In the past I've made a cheese plate, 7-layer dip and even just some onion dip and chips! I'd love something you know is a hit. Any ideas??
A quick one I use is cream cheese and jelly with crackers.
The night before, I soften the cream cheese and shape it into the shape of a Christmas tree and put it back into the refrigerator. Try not to make the cheese too thick, perhaps 1/4 inch high. The day it is needed, I take out the cheese, spread it with jelly, dump out the crackers and you are done! You can use any flavor of jelly and any kind of crackers. I usually use wheat thins.
red or green jalapeno apple or jalapeno strawberry jelly, it's very good on the cream cheese. Love the idea of the pp about shaping it like a Christmas tree.
roll out cresent rolls all together (like a pizza crust). cook then when cooled, top with a mixture of cream cheese and dry ranch dip. then top with your favorite veggies! yum
King's Hawaiian roll sandwiches - although this recipe says to bake/serve hot, you don't have to. I've made them cold many times, although they're better if not served straight out of the fridge. You can use whatever meat/cheese combo you'd like.
Sausage balls - another one that doesn't have to be served hot. I keep mine in a sealed container and don't even put them in the fridge - they usually get eaten within a few days and have always been fine.
2 cups shredded sharp cheddar
2 cups all-purpose flour
Cayenne pepper to taste
2 sticks butter, softened (butter only, no margarine. Don't let it melt)
2 cups Rice Krispies
Cream cheese and butter together. Blend in flour slowly. Stir in Rice Krispies and cayenne. Drop batter on ungreased cookie sheet and flatten with fork dipped in cold water to make round wafers. Bake at 375 degrees in preheated oven for 10 minutes.
