we used:

Judy Moody (the first one): it was the first thing we read when school started, and I actually read it aloud to them and they had to create a "me collage" just like Judy did for Open House in September.

A Time for Andrew
Mrs. Frisby and the Rats of N.I.M.H.
Miracles on Maple Hill (which they LOVED and we had pancakes with REAL Maple Syrup for a treat when we finished the book)
The Hundred Dresses

I used Sign of the Beaver with my 3rd grade GTs for many years. It was the only one I did consistently. I always gathered suggestions from them for the others. You might also try Junior Great Books.

What activities or assignments did you have the Gifted and Talented 3rd grade students do with these books. I'm teaching g/t reading to 3rd grade for the first time this year so I need some ideas.
