DH and I are getting kind of tired of my go-to salads: beef (burger) taco salad, chicken taco salad, and Chinese Chicken salad.

Anyone have a favorite salad that includes protein so it's an "all-in-one" meal?

Extra points for those not involving chicken. DH tires of chicken easily. Now, me? I could eat chicken every night!

And grilling the meat would be great so I don't have to heat up the kitchen.

Steak Fajita Salad

Ingredients:
Ingredient Checklist
8 ounces beef steak, cut into thin strips
2 teaspoons dry fajita seasoning
1 tablespoon vegetable oil
½ cup sliced red or green bell peppers
⅓ cup sliced onion
1 (11 ounce) package DOLE® Just Lettuce
1 medium tomato, diced
¼ cup drained canned black beans
¼ cup sliced black olives
¼ cup shredded Cheddar cheese
Southwest Fiesta Dressing (recipe below)

Directions:
Instructions Checklist
Step 1
Sprinkle beef strips with fajita seasoning. Saute beef in oil in large nonstick skillet over medium-high heat 3 to 4 minutes.

Step 2
Add peppers and onion and saute 2 to 3 minutes longer or until vegetables are tender-crisp.

Step 3
Divide lettuce on 2 large plates. Spoon beef mixture over lettuce and arrange tomatoes, beans, olives and cheese over each. Serve with Southwest Fiesta Dressing, to taste. Refrigerate leftovers.

Southwest Fiesta Dressing
Whisk together 1/2 cup plain yogurt, 1/4 cup light sour cream, 2 tablespoons ketchup, 2 tablespoons minced onion, 1 tablespoon lime juice, 1 tablespoon finely chopped cilantro, 1 teaspoon ground cumin, 1/2 teaspoon chili powder, 1/2 teaspoon garlic powder and 1/4 teaspoon salt. Makes about 1 cup.

I love a regular salad with a protein added…seafood, chicken, or steak.

I like to add different fruits, seeds, etc to change it up too!

Nothing fancy, but you can change it up by using the same basic ingredients and changing out the “extras”

chicken:

I posted this one a few weeks ago. It's easy and refreshing on a hot day.

Chicken Stuffed Melon
1 med. cantalope
2 C. shredded leftover chicken
1 C. green grapes
2 T. toasted, slivered almonds
Remove seeds from melon, scoop out melon, cut in chunks, toss with remaining ingredients and dressing.
dressing: Combine 2 T. honey with 2 T. lime juice and a dash of nutmeg.

My current favorite is very simple. It’s called the Straight A salad.
Arugula
Almonds
Avocado ( mashed up in a little clump to mix in)
Asiago cheese

Add grilled chicken strips or salmon.

I just use a vinaigrette dressing.

Here’s my salad—pick & choose.
*protein (shrimp, salmon, tuna, chicken, nuts, black beans, garbanzo beans)
*fruit (nectarine, peaches, oranges, berries)
*snap (jicama, red onion, green onion, yellow/orange bell peppers)
*lettuce (butter or romaine are my faves)
Favorite vinaigrette.

I always do a mix of veggies, tuna, garbanzo beans, and quinoa. Sometimes I make a Mediterranean salad using the quinoa but the last time I threw in plain quinoa. Everyone liked it.

buttermilk dressing:
1/4 C. buttermilk 5 anchovy fillets
3/4 C. mayo (I just use a squeeze of anchovy paste)
6 cloves garlic 1 T. fresh lemon juice
1 t. Worcestershire sauce

Mince 3 cloves of garlic and mix with other ingredients. Roast remaining cloves til soft, blend in dressing. Chill dressing for 1 hour.

Toss 1 pound crab with 1/4 C. dressing and 2 T. grated parmasan cheese. Chill.
Combine 14 C. torn romaine lettuce and 3 C. baby mixed greens, add crab, croutons and avocado chunks. Toss with dressing. Sprinkle 1/3 C. grated Parmasan cheese and serve.
Will serve 5 adults.

Chef/Cobb Salad:
lettuce (salad mix includes carrots and cabbage)
boiled eggs
cut up sliced deli turkey and ham
strips of 2 kinds of cheese
sliced olives
chopped tomatoes
cut up avocado
blue cheese crumbles
crumbled up bacon


Italian Salad:
lettuce/salad mix
sliced and cut up salami
sliced and cut up provolone
artichoke hearts
black and green olives
our fave dressing for this:
Good Seasonings mix (with vinegar and oil)
