You were so helpful with the Kohl's post that I'm reaching out twice. I'm looking for something relatively easy to make for dinner this evening that does not involve chicken. DH is tired of my 101 chicken recipes. Will you post an easy recipe here?

I buy the dough and keep in the freezer. I always have tomato sauce and mozzarella cheese on hand. I also usually have turkey pepperoni on hand. Sometimes I saute broccoli florets in a little olive oil and garlic and throw that on as well. It is very yummy and quick to make.

When I don't want to have to mess with dinner after a long day, I do a crockpot pot roast and baked potatoes. I use two crockpots. I put a chuck roast seasoned with Montreal seasoning blend and some Worchestershire sauce in the first pot. In the second one, I put the baking potatoes wrapped in foil. I cook both on low all day. Open a jar of beef gravy and nuke some veggies right before dinner. Yum!!

Hawaiian Meatballs in the crockpot (serve over rice). I usually make this as a one-dish meal since there are fruits and veggies already in it.

What about Frito Chili Pie? My DH loves that and says I don't fix it often enough.

Just make chili using the McCormick pouch recipe, then put Fritos in the bottom of your bowl, chili on top, shredded cheese, then a dollop of sour cream.

What about a ham? So easy to cook. (Also, lots of leftovers!)

A nice soup in the crockpot?

A penne pasta with shrimp and broccoli rabe or spinach with a light sauce? Or just sauteed with garlic and olive oil?

He will eat seafood, so I made this one a couple days ago. Fantastic! Worth the trip to the grocery store. If you don't like spicy stuff use less curry paste. Serious deliciousness.

This is so easy I feel guilty when I make it but DH loves it:

can of black beans, drained
taco seasoning to taste
a cup of uncooked rice (but cook it, I just can't remember how many cups cooked rice it make)
a 1/2 cup jack cheese

Mix it up and serve. Add salsa if you want.

I might be late but how about spinach and diced zucchini lasagna with ricotta and vodka sauce. Mozzerella cheese on top. I made that for Christmas for my parents and I.

What did you end up making?
