I caught myself telling the bagging clerk, "Thank you for the job you did bagging my groceries - you were very organized."

Do you think other professions fall into this kind of thing?

I do it all the time to clerks, random strangers I see in public (often kids) and also my Dh, who calls me on it and laughs!

I do it all the time, everywhere. I don’t see anything wrong with it. Who doesn’t like a compliment?

I don’t consider a sincere compliment “teacher speak.”

I think it's ok, unless you say it in a sort of sing-song voice: "Oh Johnny, I like the way you packed those bags for me!"

I was a lifeguard for many years in HS and college. I always had to really resist the urge to tell kids to stop running in public places .

To be honest, I think store clerks have a rough job right now and I intentionally look for ways to affirm them. I just surprise myself with what I notice. My DH would never think organizational skills were something to compliment. However, he's a good listener and clerks routinely tell him things like their husband is going through chemo.
