My friend is pregnant and we were trying to brainstorm some meals that freeze well so that she can make some things ahead of time. We thought of meatballs, lasagna, baked ziti, and soups. Any other ideas?

Obviously depends on whether you like it but meatloaf freezes well. I actually take a large recipe and make it into smaller portions, like mini meatloaves, then freeze those.

She could cook up a bunch of ground beef and freeze it, then thaw it, season it, and make tacos. Or thaw it, and make sloppy joes, etc. You can season the taco meat ahead of time but I have found it loses a bit of its kick if you do.

I've used the cookbook Don't Panic, Dinners in the freezer with success! I love the cilantro chicken enchiladas, chicken pot pie, and several other dishes. If you google it sometimes people will review it on a blog along with the recipe.

Huntington Chicken and Tator Tot casseroles are always good. I have also made enchalidas to give away as well.

I'm busy trying to come up with freezer meals as well. I know though, that since I am nursing I have to be careful if what I eat. Ex: no broccoli, no garlic, peppers, onions etc

I used to freeze our leftover Thanksgiving meals in those divided plastic containers. One container was one dinner each. They froze very well. That would have been turkey, green beans, sweet potatoes, etc. We would freeze mashed potatoes too, but they were always cold when everything else was warmed. You can google to find out the shelf life in the freezer.
