On the menu—

1. Tomato and feta pasta (from the viral video-it has entered the “regular” rotation as it’s easy and delicious)
2. Chili
3. Spaghetti squash and green beans
4. Crab cakes and salad
5. Take out pizza to eat on drive to cottage.

I need to make a menu because my son asks me what’s for dinner every day even at 7:30 AM. It’s so important for him to know and I end up just making what people “feel like” or what I feel like making.

I think here’s my menu:

Tonight:Sausage and pasta with peas and a white sauce and a salad

Mon:fast food because we have a trip

Tuesday: freezer pizza and a salad

Wednesday: Tilapia with vinegar butter sauce, couscous and asparagus

Thursday: macaroni and cheese, bacon peas, and a coleslaw of some kind or a salad

Friday: Pot roast, roast potatoes and… a salad. Again. Maybe I’ll make Parmesan tomatoes since I over play salads.

Saturday: baked chicken, mashed potatoes and lemon butter green beans.

Saturday: taco salad

Sunday: Door Dash--Cafe Rio (the BEST Pork Barbacoa Enchiladas!--those handmade tortillas....YUM)

Monday: fend for yourself--I'm going to have tomato soup and grilled cheese--neither of which DH "can" have--saw the soup in the cupboard and decided it needed to be used up--will make an extra sandwich and set aside some soup for Tuesday's lunch

Tuesday-Thursday: I don't know, and I don't care!
(For years i have been making the dinner plans and doing 90% of the shopping--based on what we have in freezer and what's on sale. I try to plan out the whole week so none of that "what do you want? i dunno, what do you want? nonsense)

The last couple years we've settled into DH making dinner Monday-Thursday (since he likes to eat at 6:00 like an old man, and I don't always get home before 5:00--also, he is off work by 11:00AM) We do dinner "out" (take out the last 2 years) on Fridays as a treat for making it through the week, and I take care of dinner on weekends.

My teaching partner has been on extended leave all year; one of our 6th grade teachers just had emergency back surgery....I'm exhausted!!!

Friday: Blaze pizza--we have a BOGO

I am going to try making chicken piccata in the instant pot. I got a recipe from Amy+Jacky that looks good. Other than that….

*Leftover spaghetti
*Round steak with mashed potatoes and gravy (DH) sweet potato (me) and broccoli
*salmon sheet pan meal (skinny taste)

Not sure what else
