I eat salads year 'round, but there are certain salads I typically only eat during the summer. For some reason, I prefer lettuce-free/bean-free salads in the summer. My go-to salads so far are:

Cherry tomato, cucumber, fresh mozzarella pearls with shredded basil and vinaigrette

Shrimp or no-shrimp cocktail with clamato, spicy V8, cilantro, tomato, cucumber, celery salt, pepper

Sliced strawberry and watermelon cubes sprinkled with a bit of lime and Tajin seasoning

But I have been enjoying a salad, made of kale, baby spinach, raspberries, and grilled chicken or salmon.

We love romaine, pasta, grilled chicken, Caesar dressing, croutons, and freshly shaved parmesan.

One of my go to salads in the summer is a Greek village salad. Chunks of tomato, cucumber, red or green pepper, and sliced red onion. Sometimes I will add kalamata olives. Chunks (not shredded) of good feta cheese. A dressing of lemon juice, olive oil, and oregano. Delicious.

Sorry, I do like lettuce because I like a big salad. . Hope that's not a dealbreaker.

1. Butter lettuce, grilled chicken, strawberries, orange bell pepper with Newman's Own Lite balsamic dressing.*
2. Mixed lettuce, grilled chicken, red grapes, red onion with Brianna's Blush Wine Vinaigrette dressing.*
3. Romaine lettuce, black beans, corn, jicama, cheese with Salsa for dressing and a few crushed tortilla chips on top.

*With croutons if I'm at goal weight.

P.S. I'd love crayonbox's salad if I could have limitless calories.

I love potato salad during the summer as well as a good spinach salad with tri tip slices,cheese,tomatoes,walnuts, egg,...

Grill steak with ancho chili rubbed on. Then slice thinly. Add lettuce greens, red onion, crumbled blue cheese and chopped fresh mango. Yum!

I''m not a lettuce fan...so I like Grape Salad!

I use Red and green grapes and peanuts not pecans.

Broccoli slaw with dried cranberries and almonds with a homemade balsamic vinegrette. Feta cheese if I'm feeling like it.

-lettuce, strawberries, blue cheese, walnuts...citrus dressing
-tabouli with chickpeas and feta cheese
-cole slaw made with purple cabbage, carrot, cilantro, jalapeņo, lime dressing
-sliced heirloom tomatoes with basil
-lettuce, tomato, cucumber, radish, chicken, havarti cheese
-wedge salad made with a wedge of butter lettuce or romaine, blue cheese, tomato, green onion, creamy dressing

So many choices!

lisa, how do you cut a wedge with butter or Romaine lettuce? I only know how to do it with iceberg.

All of the ones posted sound so good! I love salads all year, but especially in the summer when it's so warm out. Here's one of my favs:

1 (20 ounce) package refrigerated cheese tortellini
1 1/2 cups grape tomatoes, cut in half
1 large cucumber, chopped
1 cup kalamata olives, pit removed and chopped
1/2 red onion, chopped
3/4 cup crumbled feta cheese

dressing:
1/4 cup extra virgin olive oil
3 tablespoons red wine vinegar
1 clove garlic, minced
1/2 teaspoon dried oregano
Salt and pepper, to taste

I just cut the head of lettuce in fourths through the base. It isn't as "wedgie" as iceberg, but it does hold together so you have to eat it with a knife and fork.

There's no certain salads I eat mainly in the summertime. I'll eat lettuce, pasta, potato, etc. salads year-round.

Strawberry Turkey salad with bow tie pasta, poppy seed dressing. It also has cut onion, red pepper, and walnuts. So good.

I just made a Mediterranean Quinoa salad that I love. It has black olives, tomatoes, cucumbers, green onions, feta, and parsley. The dressing is lemon juice, olive oil and salt and pepper. Oh, and of course, quinoa! It is so refreshing.

I am making my MIl's chicken salad tomorrow. It has elbow macaroni, celery, mayo, frozen peas, and a couple other things. My DH loves it and so do I. Yum!
