I cooked down some chicken yesterday for marvelous meat and stock so I can make soup. I'm not in the mood for chicken noodle, though. How do you think this would taste thrown in a soup pot for an hour or two? Anything I should add or omit?

chicken
chopped green onion
chopped mushrooms
diced potatoes
red beans
diced carrots
chopped fresh garlic, a little rosemary, and a splash of white wine

Sounds yummy to me! Love the different colors. I'd add salt, but the rest looks good to me! Rosemary has a great flavor.

Sounds good. The nice thing about soup is that you can put whatever you want in it.

Love homemade soup. I like to use orzo, but barley may taste good as well.

I used a recipe for chicken soup that used spinach and tortellini in it. It was delicious.

Sounds delicious! I'd switch the green onion to a yellow onion and add some finely chopped celery. Then I throw in spinach and green beans.

I have a recipe for a chicken soup that I want to share. It has beans and kale in it. It is honestly one of the best chicken soup recipes.

I made the recipe that Jackie posted. It is perfect for these dreary days. I have to admit I used a pound of ground chicken in place of the baked chicken, but it was still great. The touch of rosemary and the red wine vinegar was just right. I started with the recommended salt and never had to add any even though my broth and beans were low salt.
