need zucchini recipe (no parm)

i grabbed some zucchini for a side for dinner tonight. i've made zucchini fries (with grated parmesan and pork rind crumbs) before, and it was goooooood. but i didn't grab parm.

does anyone have a good zucchini recipe? (baked is preferred over fried)

Skillet Tomatoes and Zucchini

Skillet Tomatoes and Zucchini

2 tablespoons margarine or butter
4 small zucchini, sliced
2 small summer squash, sliced
1 medium red onion (I cut into medium-sized pieces instead of slices.)
2-3 medium tomatoes, cut into medium-sized cubes (I use Roma tomatoes.)
teaspoon garlic salt
teaspoon basil leaves
dash pepper
shredded mozzarella cheese to taste
seasoned croutons

1. Melt the margarine/butter in a large skillet.
2. Add zucchini, summer squash, and onion.
3. Cook over medium head until crisp-tender.
4. Gently stir in tomatoes and seasonings.
5. Cover and cook two minutes more.
6. Remove from heat and sprinkle with cheese and croutons. Use your judgment when adding cheese and croutons.
7. Cover and let stand about a minute so the cheese melts.

When I make this recipe for myself, I do not add the croutons and cheese. They get soggy. With any leftovers, I warm what I plan to eat in the microwave, and then top with the croutons and cheese.

You can leave out the cheese...
