My DD is allergic to eggs so I was trying to find an eggless pumpkin muffin recipe. I found this weight watchers recipe.
1 (15 ounce) can
pumpkin 1 (18 ounce) box
cake mix (yellow, white, spice) Mix both together until smooth.
- Spoon into muffin tin (either lightly sprayed or with muffin cups).
- Bake as directed on cake box
I used the spice cake mix. Next time I might add a little bit of water because the batter is quite thick. I also sprinkled a little bit of cinnamon sugar on the top when they were done.
Some other people said if you use yellow or white cake mix you might want to add a little bit of pumpkin spice and cinnamon. These smell great and taste good too. They said 2pts per muffin but their recipe made more than mine so mine might have been a bit bigger.
