I know I could search the archives. But I look forward to posts about meal plans for the week. Mine are getting stale and we have been eating way too many salty things. We've had lots of grilled burgers, kielbasi, pizza, and slopppy joes -per granddaughters request lately.
So what are some ideas for healthy (less salty) meals?
Zucchini, cukes and tomatoes are starting in the garden.
Today’s lunch (main meal) will be a gluten free wrap or 2 with diced onion and zucchini, sautéed and mixed with eggs. If the garden cooperates I will add a sliced tomato in there too. Maybe some cheese.
Yesterday I mixed drained shredded zucchini with cheese, egg and a bit of flour, baked in a sprayed pan until set. Topped with a very meaty meat sauce, diced tomatoes and cheese. Baked some more. Sort of a zucchini crust pizza type substance.
Pretty much any meal we have right now will contain zucchini 😂
My favorite healthy zucchini meals are zucchini boats. There are so many options taco zucchini boats, lasagna zucchini boats, jalapeño popper zucchini boats, southwest zucchini boats, chicken parm zucchini boats, buffalo chicken zucchini boats, bbq zucchini boats, Greek zucchini boats, and it’s easy to sneak in extra veggies in the filling.
This week’s healthier meals are:
- Homemade taco pizza (with refried beans instead of meat)
- Zucchini boats
- Turkey tostadas (I make my own salt-free taco seasoning)
I like to sauteed veggies in olive oil (California infused is my favorite olive oil right now) then add in different ingredients. I don't follow a recipe, just add in whatever I have or feel like at the time. Sometimes it's eggs to make an omelet. Other times it's spices, noodles, or rice. Other times I add meat along with the noodles or rice.
You might also look at foods from other cultures to find different ways to cook the same foods. We are doing that with Japanese foods since we have a connection to Japan with our son and his family living there. It has been fun, and we aren't as bored with the same foods right now.
-Chicken kebabs and Greek salad
-Pesto pasta with shrimp (I make my own pesto)
-Grilled Salmon and Tomato/Cucumber salad
-Homemade pizza (my husband makes the dough and sauce)
-take out to support a local restaurant
I love mini zucchini pizzas!
Large zucchini work best. Slice zucchini into rounds, coat with a little oil and toast for a few minutes. Then, top with whatever toppings and sauce you like. They’re surprisingly filling.
I thought of panzanella when I read cucumber and tomatoes. I don’t see why zucchini couldn’t be added, too. I’ve added mozzarella pieces into it, too. The recipe I’ve used was the barefoot contessa’s. The homemade bread croutons were so good in it, I remember. It’s been a while since I last made it, but I think I see it in my future with our tomatoes and cucumbers ripening, too.
I did this in my slow cooker. I used boneless thighs but the original recipe called for chicken breasts. This was so easy, and so good. I used a small container of pesto sauce from my grocery store, but you can easily make your own. https://www.lecremedelacrumb.com/4-i...ranch-chicken/
DH has been doing most of the grocery shopping since the pandemic started. He brought home tiny black lentils, and I am making lentil soup with some of the greens that I have in my fridge (collards, spinach, beet greens). I had planned to make it Indian style, but found some leftover spicy pico de gallo that I made a few nights ago, so it will be more Mexican style now. I still have half a dozen corn tortillas which I will make into chips. I use very little salt in my cooking, using garlic and lemon/lime instead. I also have leftover brown rice, which DH loves to combine with his lentils.

You can add cucumber to this if you want the crunch.
You can do a very similar thing with cucumbers, spiralized beets, carrots, red cabbage, sweet peppers....really whatever veggies you like. If you don't like mint, sub in fresh basil.
I appreciate your responses! You have really come through. I made a version of a burrito bowl tonight-thanks for that suggestion. I used zucchini, a pepper and tomatoes from the garden.Very delicious and so fresh tasting.
I plan to shop tomorrow for salmon and will use the leftover rice for that meal too. We haven't had that for awhile.
