I’ve been reading about the health benefits of this weed and wondered about eating it instead of pulling it in my garden. But, I’ve hesitant. I’ve only ever eaten garden food I grew on purpose. Thoughts?

I have purslane in my garden too. It is basically a weed. I throw it in my salads and also steam it with some garlic, then add some salt and pepper. You can add some olive oil as well, but I like it without.
When I was in Italy, it was apparently purslane season because restaurants offered it on their menu.

I had to look it up to make sure it was the plant I thought it was. I watched a good video comparing purslane to hairy splurge. I've never tried it. I do pull it as a weed from the garden! Let us know if you try it.
