I have done....
paper plate scarecrow (super cute) google it for examples

paper tear and glue pumpkins or candy corn these are super cute because they have the Eric Carle sort of effect when the colors aren't exactly the same.

Painted pumpkins

This was a lesson on mixing primary colours to make secondary colours. My students were given blue and yellow to paint the green and red and yellow to paint the orange. We painted a whole sheet of paper orange and a half a sheet green. Then we cut teeth for the mouth before gluing it on to the pumpkin, added eyes, stem and mounted on background.

An easy Hallowe'en project . Start with 6" by 4 1/2 " green background. Use 2 1/2" by 4 1/2 " strip for hair, 3" by 4 1/2 " for coat. Cut a disposable pie plate for the bolts.

I like to take a black and white picture of a tree that has no leaves on it. I let students paint with q-tips leaves for the color of fall(red, orange, green, yellow, brown)Some also paint them falling and on the ground. They are very colorful.
