Tips for growing plants in the classroom?

I want to expand my unit on plants this year and spend some time growing plants with the kids. I have young ones, so I think they will love this. I want it to be successful though and I'm not much of a green thumb. Any tips for growing plants in the classroom? What would I need to grow plants in the fall and inside?

I grew beans, garlic, and corn but only as an experiment to observe the process from seed to plant. I used a clear container with potting soil. Put the seed aginst the wall of container so the kids can observe the entire process of development of the seed. make sure plants get some sunlight or artificial light. keep a journal from day one until the seed is a little plant. when the plant is old enough to close the experiment kids can do all kind of drawings and exhibit their art work.
The journal can collect rawings, new vocabulary, questions/ answers and possibilities for next experiments.
I hope this helps
