Sometimes when I'm trying to be healthy, instead of counting servings of fruits and vegetables, I like to keep track of the variety that I'm eating.

So far today I have had peaches and blackberries. Not good!! Breakfast was just a croissant with a peach smoothie and "lunch" is crackers and blackberries. I'll do better for dinner - planning on a curry with lots of vegetables.

Yesterday was a really good day - grapefruit, carrots, onions, bean sprouts, raspberries, romaine lettuce, cherry tomatoes, and scallions. And grapes if you count the two glasses of wine!

Breakfast - spinach, tomato & scrambled egg wrap

Lunch - lentil soup (lentils, carrots, onions, celery)

Tonights dinner - salad, fish and maybe a potato

Two Mandarins
Handful of cherry tomatoes
Pickled okra
Carrot sticks

We always have a big salad for dinner so that will add to the list for the day.

I need to get some of those “grapes.”

Breakfast...green peppers & onions in an egg sandwich , banana

Lunch...macaroni salad with tomatoes, peas, corn, carrots, broccoli, purple cabbage...cole slaw with purple cabbage and carrots

Dinner...veggie pizza with tomato, broccoli, onions, olives

I'm impressed!

I haven't eaten yet today, so none. I got a banana in yesterday, and a healthy green salad (not lettuce- other types of greens). And some cabbage. That's pretty good for me

Haven't eaten anything yet today. In my EAT ALL THE THINGS quarantine, I have actually ingested more fruits and vegetables than before. Not sure it counterbalances the bakery goods I have also consumed.

You are better than me! I had a slice of cinnamon raisin toast for breakfast...does that count for fruit since raisins are a fruit?

For lunch, I had a salad with lettuce, spinach, and onions.

I know the main meal for dinner will be carnitas. I'm not sure about sides, though. I use a homemade salsa with cilantro, peppers, tomatoes, onions, and lime juice, too.

Not much around the house for snacking fruits and veggies though. I need to start dieting again. It started today. I'm planning on going to the store and getting more fruits and veggies for snacks.

I had a smoothie with baby spinach, pineapple, banana and homemade yogurt. Iím having pizza tonight with chunky homemade tomato sauce with carmelized onions.

Breakfast- oatmeal with apples
fruit bowl with cantaloupe, banana, watermelon
Lunch- big salad with greens, kale, carrot, cucumber, tomato, celery, pepper
Dinner- pizza with brussel sprouts, onion, pepper, olives, tomatoes, mushrooms
big salad with greens, kale, carrot, cucumber, tomato, celery and
peppers.

I eat a plant based diet, so lots of fruits and veggies.


Yesterday we had a ginger carrot pasta dish that was really good- lots of carrots!

So far today I've eaten a cup of fresh blueberries, and then onion, tomatoes, avocado, mushrooms, and plenty of fresh spinach in a two egg cheese omelet. The omelet was much more veggies than eggs.

That was breakfast. For lunch I'm currently having homemade whole wheat chocolate chip oatmeal cookies with walnuts and raisins. More fruit!

We are having stir fry for dinner so I will get in mushrooms, green beans, broccoli, tri-colored peppers, onions, and pea pods.

Blueberries in our oatmeal. Butter lettuce salad with tomatoes with leftover frittata. Apples with our cheese and wine. Acorn squash with red onions with dinner. Oops, we also had clementines on our boat ride this morning!

Tomato and berries for breakfast ( and tahini)
Carrots and pumpkin stew in coconut milk for lunch , green beans, an apple
Corn on the cob, homemade tomato sauce on pizza with mushrooms and olives, green salad, spiced pears and an apple for dinner.
Pretty standard as we eat mostly plant based meals

Breakfast - do the raisins in my Raisin Bran count?

Lunch - I had leftover shepherd's pie so potatoes and mixed veggies
Dinner - tomatoes, corn on the cob and watermelon


If I'm being perfectly honest, this is actually pretty good for me this week. It has been an off week so I have definitely been eating more pre-packaged food than typical. I finally made it to the grocery store last night and was able to stock up on fresh foods.

My son got me an Edible Arrangement for my birthday. I received it today. Iíve had banana, cantaloupe, pineapple and apple. They were chocolate covered.
