I just made myself the best lunch! I bought a zucchini at the farm stand and spiralized it. I sautéed the noodles in a touch of garlic olive oil, added 8 halved cherry tomatoes, (from my little garden), and homemade pesto. It was so good I wished I had more! We have another trip to the farm stand planned for Thursday so I can do a repeat then

That sounds delicious! Yesterday I made myself a caprese salad with homegrown tomatoes and basil. Yum!

Both sound so good!
Yum! I did a great chicken for dinner the other night with some tomatoes, herbs, and peppers from our garden. I grilled the chicken in my press griller than stuck it in the toaster oven with slices of basil, tomato and mozzarella on top. I drizzled it with a blackberry balsamic when it came out of the oven. Salad on the side.

Your fresh veggies lunches sound wonderful! I'll share one of mine from this week. Some spinach and lettuce leaves. Marinate halved cherry tomatoes (from our garden) with olive oil, balsamic and a little pesto (from Pioneer Woman). Put the marinated tomatoes on the lettuce salad-the marinade makes the dressing too! I sprinkle a little mozzarella too. Really sweet and delicious!
