Before I retired, my team would occasionally go to a restaurant that had absolutely fantastic Baked Potato Soup. OMG, Iím salivating just remembering it.

I love soups but they do have to be plant based. Lately I have been making lots of spicy Indian dahl, which comes out different every time. I can eat it when the weather is cold and when it's hot.

Baked potato soup, split pea soup, ham/bean soup, and 7-bean (or however many beans you have lying around!) soup are my favorites. Yum! Crusty bread to dip for most of those, and I'm in heaven!

I LOVE soups! Tonight I made Red Lentil with Spinach soup from Skinnytaste. It has Middle Eastern spices which I always double to enhance the warming flavors. The bonus is that it comes together in about 45 minutes with the hardest part being chopping the carrots, onions, garlic, and parsley.

Other favorite homemade soups in our house are chicken with pastina, turkey rice, and my husbandís chicken escarole with rice. So yummy

Oh my gosh! I absolutely love soup and make homemade soups often. I asked DH and DS what their favorites are..
1. Chicken Wild Rice with a side of homemade popovers
2. Loaded Baked Potato with Ham and homemade breadsticks
3. Chicken Noodle with homemade dumplings, this is thick like stew
4. Beef with veggies and barley with homemade breadsticks

Yummy....I think soup is for dinner tomorrow.

My go-to if I am making it is my Santa Fe soup. I also have a great chicken and wild rice recipe and one for broccoli cheddar. I love potato soup and French onion if I am eating out. I don't have a great recipe for either of those.
