In one of my videos, we are working on background knowledge for a new unit. The brainstorming activity took longer than I thought, so the students had to fill in the exit ticket (which had the thought provoking question) the next day. Is this acceptable if I write about the exit ticket and maybe use it for evidence? Is a background knowledge activity enough to call a process of inquiry in and of itself?

You can write about before and after the video. 15 minutes isn't long enough for an entire lesson and assessors get that. It's just a peek. The video supports the writing, not the other way around.

Thank you for the feedback! The inquiry process was a weakness in my first submission, so I am really focused on it this time. I am just worried that since itís not actually in the video, I feel like itís not as strong as I wanted it to be. I can definitely write about it, though, and how it will change my plans for this group of students.

I actually don't think videoing your students filling out exit tickets would be the best use of the 15 minutes you're allotted. But if the exit tickets are part of the learning objectives (or whatever term they use, i forget) you laid out, then write about them and think about how to integrate them as evidence. They know your lesson is probably longer than 15 minutes. Good luck! I did ELA AYA, so our C3's are pretty similar!

I certified in EA/ELA last year and did a very similar lesson for one of my videos. I definitely used things I did before and after recording as part of my evidence. There were lots of goodies in that lesson that I didn't film in the 15 minutes, and that's why they give you many opportunities to talk about the whole scope of the lesson, not just the 15 minutes.
