I know how many of you love to share recipes and I tried this one last night and it was easy and the whole family loved!

1 lb. ground beef or turkey
1 small onion chopped
mashed potatoes (the real thing or instant is fine) I'd say about 2 1/2 cups worth
2 tbsp flour
1 tbsp ketchup
3/4 cup beef or chicken broth
1 can mixed veggies ( or any kind veggies you like)
1/4 cup shredded cheddar
salt and pepper to taste

Prepare and mash potaotes, set aside. Sautee onion then brown meat. Add flour. stir. Add ketchup and broth, simmer low about 5 minutes. Spoon into 2 quart casserole dish. spoon veggies and spread on top of meat. Sprinkle cheese on top. Spoon potatoes and spread on top of veggies. Bake in preheated 350 oven 20 minutes.

This looks yummy, and healthy! I'll have to try it when my vegetarian college student goes back.

I wondered the same thing. It sounds like the Shepherd's Pie we used to have at school when I was a child. I'll have to remember to try it when I get my oven fixed.
