What's on your menu?
I'm thinking chicken salad or a skinnytaste taco salad. Can't decide what else!

Iím making Skinnytaste Philly Cheesesteak Baked Potato. Itís my favorite recipe. I could eat it every week.

Iím also making spaghetti pizza. Lots of leftovers for later.

Tonight Iím picking something up.

DH just made bbq pork chops, our frozen corn, and some sausage. He has 2lbs of hamburger defrosting for taco meat and stroganoff. A roast is also defrosting to go in the crock pot tomorrow.

a free dinner (giftcard) at a new local restaurant that looks amazing. Tomorrow is Traegered pork chops and mashed potatoes (with leftovers for Monday). I think we'll also do Costco cauliflower pizza one night and hamburger patties. I also picked up a no fuss soup mix at Winco where you only have to add water. Sounds like my meals are pretty much planned!

DH and I haven't even gotten to the planning stage yet. We both go back Tuesday, so we will be lazy and eating crap if we don't plan something.

DH makes tasty chicken fajita wraps.

We may do vegetable soup one night and French dip sandwiches another night.

Cheese and spinach ravioli
Air fryer chicken legs, green beans, and risotto
Garlic shrimp and pasta
Salmon fillets and roast potatoes
Eat out one night

Always a green salad with tomato and cucumber and fresh peppers as a side.

One of my goals this year is to do more meal planning. All of the above is either in my pantry or freezer, except for the salmon ( always buy fresh) and the vegetables. We are going to "eat the freezer" for the next couple of weeks.

January is the month we eat from the freezer and stuff we have on hand.
Could be almost anything.

But so far I know:
1. I have a couple of cabbages to use so it might be deconstructed cabbage roll casserole.
2. Lots of pepper strips left over from veggie trays and some frozen Christmas turkey leftovers so I predict sweet and sour turkey stirfry.
3. We also have a lot of carrots that will likely be made into carrot soup.
4. A couple cucumbers and my fresh dill will find their way into a couscous salad.
5. Toasted western sandwiches will use up half pound of bacon and onion.
6. I have also accumulated about 15 ripe bananas in my freezer --I predict a baking marathon of about 5 banana loaves.

Thanks for starting this thread.
It made me do some thinking.

the next week or so:


tonight: steak and zucchini for DH and I, baked potatoes for whoever else is eating with us
sunday: make your own sandwiches, chips, fruit and veggies
monday: parmesan chicken bites: https://www.simplyrecipes.com/recipes/parmesan_chicken/ never made it before but sounds yummy
tuesday: DH making something with pork loin tips (on sale buy 1 get 2)
wednesday: spaghetti and salad
thursday: taco salad
friday: date night to Blaze pizza (we have GCs)
saturday: grilled zucchini pizza https://www.allrecipes.com/article/t...i-side-dishes/ (#5) this will be a new recipe, too. just realized i scheduled two "pizzas" back-to-back so will probably move this one somewhere else
sunday: clam/potato chowder and biscuits

Iím doing a No Spend challenge this month, so definitely meal prepped for the week. Hopefully this will help ease me into a weight loss plan since I wonít be eating out or ordering food. Hereís what Iíve made:

-chicken piccata, brown rice, and broccoli
-weight watchers slow cooker creamy Italian chicken, brown rice, green beans
-basic salads in Mason jars
-made hummus and carrots for snacks
-still need to make caprese chicken with mashed cauliflower

When I prep, Iím like making TV dinners basically lol- I have the containers that are portioned and everything.

Monday: chicken burrito bowls
Tuesday and Wednesday: nothing. DH gone, I'll heat up something from the freezer
Thursday: crock pot pulled smoked chicken (from a freezer meal prepped pack I bought)
Friday/Saturday: I'll be visiting DD in Iowa. No cooking for me.

A pretty light week!

Texas KGirl, here's the one I use. It's technically turkey taco salad, but I use ground beef because I don't like ground turkey.
