We make large paper dolls which the kids dress according to their own heritage. They do some family interviews to learn about who came first to this country, state and city, why, etc. They find a map of their country (the ONE they choose to mostly be from) and a flag and download them. These are printed up and then mounted along with their paper dolls and we stick them up on the wall for the rest of the year. The flag has the child's name and name of the country, too. It's a good way to incorporate families into school experience. The final, culminating activity is a multi-cultural feast on the Monday before Thanksgiving. We have tons of interesting food, lots of whole families and a great time.
In past years I've also had the kids do an oral presentation of their doll, map, flag and interesting facts they learned about their country. Had to ditch it this year for a variety of reasons, but it can become a really big project.
As for writing, I like the final line of the book -- "It takes all kinds of Pilgrims to make a Thanksgiving" and I ask the kids in a writing prompt to talk about what that means to them -- especially after they've put so much time into learning about their own families.
