I am looking for a good story or novel that has lots of inferences for the students.

The Stranger by Chris Van Allsburg is a good one. They have to infer who the stranger is based upon the events in the book.

Tough Times is a old book, but great for teaching inferences.

The Sweetest Fig by Chris van Allsberg (sp??). This is a great way to show them that pictures, narration/text and dialogue are great clues that are given for them to make inferences. Scroll down to the bottom of this site and you will see links to a GREAT Jeopardy inference game using this book. I used it and the kids LOVED it!
