ideas for leftover black eyed peas

Anyone have any ideas for what to do with leftover black-eyed peas? I made a big pot, but have a bit leftover. I did find a recipe for black-eyed pea cakes, but wondering if someone out there has a better idea.

I second the Texas caviar! It's really good - you could make it and take it to school for your grade level at lunch when you go back (if it lasts that long at your house!)

You could make hoppin' john. It has black-eyed peas, rice, onion, etc. There are different recipes out there for it. My dad would crumble bacon into his and it was delicious!

I use mine to put in chili--no one even notices the difference and it's good!
