Learning Menus

I am really focusing on differentiated instruction this year. I want to try and meet every student at their own instructional level. I know the group coming up has so real low students and several gifted students. I was wondering on organizational methods that you use that work to help differentiate...but also any reproducible activities that you may have already created and want to share.
Specifically, I am looking to create learning menus for my gifted students before school starts. Subjects include: 4th grade Math: place value, adding and subtracting large whole numbers, x, division, fractions, measurement, geometry.
I will also be new to teaching science as well. So any learning menus or differentiated projects would be VERY helpful! Thanks!
