Hold Your Breath

I do an lesson from the old "Used Numbers" curriculum on holding your breath. It's pretty basic but lends itself well to stem and leaf because the range is so broad.
Day 1: Discuss what they are going to do (time each other holding their breath). Try it wholeclass. Divide into groups to come up with a process. Groups share ideas and class decides on best way to gather data with fewest variables.
Day 2: Gather data. Discuss. Make a line plot to prove its impracticality for this data. Then, teach stem and leaf.
