Sentence writing activities for struggling writers

This month our 2nd grade intervention teams are focusing on sentence writing. I have the group who struggles the most with writing (just trying to put a subject with a predicate is a big accomplishment).

Can you please share some motivating sentence-writing activities I can do with them? Right now we are making "Me In A Box". They write simple sentences about themselves & put them in a treasure chest-like box with their faces drawn on top of the box.

Any other motivating project ideas are appreciated!

Our school uses a program that ties books into writing. They had a book "I Will Not Ever Never Eat a Tomato" which was cute and then they wrote about their experiences with foods they didn't like. If you can find books that they like to listen to and change it a bit and have them write their version or their take on the topic, maybe that will help.
