I have to bake a cake for tomorrow. I have 2 eggs & the recipe calls for 3. (It is a mix). Is there anything I can substitute? thanks!!

You can use 1/4 to 1/3 cup applesauce or mashed ripe banana, but I would suggest you add 1/4 to 1/2 tsp. baking powder to the dry ingredients and mix it in first. Mashed or sauced fruit as an egg substitute can make cakes moist, but part of the egg's original "job" is also as a leavening agent, so you might not get as fluffy a cake without adding a bit of baking powder.

Just make it with 2.

This same thing happened to me years ago, and I went ahead and made it with the two eggs. I liked it- the cake was denser and more moist.

I always make box mix cakes with 2 eggs, now. They taste better that way.

Duncan Hines used to have a lighter recipe on the box with 2 eggs, no oil, and a little more water. When the recipe was no longer on the box, I called them for it. You might try calling the number on the box. I like it better without the oil and extra egg.
