I've started making my yearly pre-holiday treat of cranberry applesauce. As I'm cooking dinner I cut up two or three apples, (I don't even bother peeling them) add some water, some fresh cranberries, some sugar and some cinnamon. It really only takes 15 minutes.

It's funny because I make a big production out of making applesauce and only make large batches, but this I'll do quick and simple. I probably make it about once a week during November and December.

I think this year I'm actually going to make it for Thanksgiving Dinner. My sons told me they like it better than the cranberry sauce or cranberry jello mold I make.

Quick Cooked & Spiced Apple Slices.

For two people:

Core & slice 2 medium apples into a microwaveable bowl. Cover & heat full power for 2-3 minutes. Shake a quarter teaspoon each of Allspice, Ground Cinnamon, and 1-2 teaspoons of granulated sugar over the partially cooked apples. Stir till thoroughly mixed. Heat again for 1-3 minutes depending on the doneness preferred. I usually just cook until the slices are translucent.

I have substituted honey or brown sugar for the granulated sugar. More sugar is needed for Granny Smith or other tart apples, less for Gala, Honeycrisp, or Delicious varieties. Other spices to try are Nutmeg or Ginger. I never peel the apples, but some people dislike peelings. Less coooking time is needed for peeled apples. These can also be made in larger quantity for a family size group. I usually cook a family size portion in a skillet or cooker on the stovetop.

Open pita, place on cookie sheet open side up, spray with Pam. Bake at 250 for 20 mins. Break up. Great for dipping. Variations: cinnamon, garlic salt, parm, pepper...
