Does anyone have a fairly simple recipe? I can't do it in the crockpot - at least not today - because I didn't let it thaw. I do have another one so could do it that way another time.

I just roast it in the oven at 350 like roast beef. I use a meat thermometer to test for done. But if you want to get a little fancier: http://allrecipes.com/recipe/21766/roasted-pork-loin/

I don't typically do pork loin in the crockpot. I rub it with a little olive oil, add any spices I like (usually just garlic salt, onion powder, and black pepper). I quarter some red potatoes and put them around it. I put a little water in the bottom of the pan and roast it in the oven for about 1.5 hours on 325.

Hadn't done one in a long time, but just did one Saturday. Spent a ton of time looking at recipes on the internet, but then decided to keep it simple.

Made a rub of olive oil, pepper, and garlic salt. Then roasted at 350 for 25 minutes per lb.

Simple is what I wanted. I also looked online, but they didn't seem simple.

Your question brings back such memories! On a day late in August, 2003, I was 9 months pregnant and we were going to cook a pork loin. We called my mom to ask her how. After just a few minutes of talking, I started having intense contractions and handed the phone off to my 3yo son. Dh got the phone and started cooking the pork loin while I took a bath. The baby came out (home birth) before the pork loin was done When I called my mom back less than 2 hours later, she figured I was calling to ask more about cooking, not to tell her I'd had my baby!

So I still don't know how to cook a pork loin, but I do know how to deliver a baby
